Duck Livers Wrapped in Proscuitto
6 Pekin duck livers
12 cocktail sticks or skewers
6 slices proscuitto cut in half lengthways
1 tsp olive oil
Salt and freshly milled pepper
-Heat a non-stick fry pan and add the olive oil, season the livers with a little salt & pepper and place in the hot pan and seal quickly on each side.
-Remove from the pan and allow to cool.
-Cut the livers into halves and wrap in the proscuitto and secure with the cocktail stick.
-Place on a non stick baking sheet and when ready to serve place under a hot grill or in a hot oven for a few minutes until crispy and completely heated through.
Use fresh rosemary to make skewers - simply remove leaves from the sticks leaving a few leaves on the end - they will add flavour as well as presenting very well.
Serve with relish or chutney.
