Cooking Your Sauce with Wines

 

Use decent table wines for reduction.  Wines for sauces will have a clear body, and a simple, clean palate.   Strong tannin and oak flavors concentrate too readily in reductions and should be avoided. Dry wines are preferred to sweet wines, because dry wines will concentrate better, and are more predictable in browning and other higher heat methods.
