Hudson Valley Foie Gras is the premier producer of Foie Gras in America. They breed and raise Moulard Ducks in a stress-free environment that allows for social interaction, exercise, and freedom of movement. For this reason, their ducks are maintained cage free and are individually hand fed to produce their unique, signature Foie Gras. Historically, Foie Gras has been cooked in a paté or terrine and served cold. The last decade has seen the gain in US popularity of serving Foie Gras seared hot with a sweet and tangy fruit garnish.
